I started watching the second series of Ciao House. I love Chef Alex! This season they are cooking in Puglia. Last season it was Tuscany.

I adore Italian food. My DNA shows a small percentage of Italian. I am predominantly British.

My husband is Italian and French. Great combo! 😁

I didn’t feel like cooking today, so I am making a spinach salad with strawberries, feta cheese, pecans and a blush wine vinaigrette dressing.

It’s so hot here and I want something cold to eat, instead of a hot meal.

I absolutely love Beef Stroganoff, Roger. Do you make yours with meatballs or with beef. I will have a taste for this now until I can get the ingredients and make a batch. Lucky Mom. Except for that tooth thing.

That’s how they did it. They used a dough attachment to get things started. Every chef has their own way of doing things. I love watching people cook.

Yeah, it’s much easier to open a box, but Ciao House really wanted them to showcase making pasta fresh, the way Italian grandmothers did!

Omg I love home made noodles
I've made them a few times, it's not that hard, but much easier to open a box. 😂

I have an attachment that goes on my kitchen aid that needs and cuts the noodles. It is collecting dust now. One of these days........

Sounds absolutely delicious! The texture of fresh noodles is so good.

Were you happy with the results?

The Italian chef who was the judge, along with the American chef judge, were saying how important it is to let the dough rest. It’s labor intensive, but so worth it to get that texture.

I do remember making noodles once but not what most people consider "pasta", they were the simple, rustic egg noodles that you cut with a knife and put in soup.

Have any of you made fresh pasta? I have not. I have eaten it. One day, I would like to try making it.

Oh gosh, I watched Ciao House on Max. I absolutely adore Italian food!

Every region has their specialties. The season I watched they were in the Tuscany area.

Americans compete for the prize of being able to travel throughout Italy and learn from the best Italian chefs. Great show!

Next season will be in Puglia.

Weather just turned rainy.. need some cozy!

Roast chicken with lemon inside & olive oil outside, roast potatos & other veg + steamed greens. Nice glass of sparkling mineral water & pomegranate juice.

Today is National Apple Pie Day. We should be eating apple pie for dinner!

My husband had an apple strudel this weekend. That man has a sweet tooth down to his toes and never gains weight.

Sounds good, Nacy. I love meatloaf. My husband prefers meatballs, he’s Italian!

Oldest daughter loves meatloaf. My youngest daughter won’t eat it. She’s like her daddy and prefers meatballs.

I think people either love or hate meatloaf! I started making meatloaf with oatmeal rather than breadcrumbs. I like it either way though.

Everyone loves mashed potatoes in our house! Fresh corn on the cob too!

Good news for avocado lovers like me!

I just googled if it is okay to eat a whole avocado in a day.

Here’s what I found online from RDN, Kim Kulp (specializes in gut health) and RDN, Stephanie Wells. (specializes in being vegan)

Eating avocados will help improve your health in these five ways:

1) More energy

2) Improved digestion

3) Your heart health will improve

4) Avocados support good eye
health

5) You might find yourself in a better
mood

The dietitians say that it’s fine to eat an entire avocado instead the recommended amount of one third, as long as you add enough protein and healthy carbs into your diet to be balanced.

The article also states that certain people should not eat a whole avocado every day because it affects them negatively.

I love making avocado sandwiches on Dave’s thin sliced whole grain bread, I add shredded carrots, diced tomatoes, sprouts, garlic and red onion and a bit of cheese (white cheddar, Gouda, provolone) whatever cheese I have on hand.

What are your favorite plant based sandwiches? I do eat meat on sandwiches, but I find that I am eating less meat overall.

I typically eat very healthy meals. We went to our jazz and heritage festival yesterday and it’s all about great music and food!

So, we got all of our favorites! Had a great time. We walked plenty at the festival so, hopefully that helped with our indulgences! 😝

We are having roasted pork loin seasoned with my favorite pepper jelly that I buy from a local farmers market and veggies tonight for dinner.

Yesterday I had pheasant, duck and andouille gumbo, trout baquet, crawfish Monica and mango freeze at the festival. All are delicious!

I cooked up some chicken broth the other day but what I was really craving is some good old vegetarian lentil soup, so I froze the chicken broth and made that instead.... I'm having some now, it was the right choice (yum)!

Thanks cw. The cabbage and carrot were ok shredded together, (like your dice I guess) but the apple made it too mushy. The recipe suggested cutting the apple into "matchstick" size. I was trying to save myself some work, but if I want apple in it I'll have to hand cut it. I do have a slicer blade - it's on the the reverse side of my grater blade. For R and I, I make fairly large amounts and it gets eaten. I working at incorporating more veggies in our meals.

Alva - recipe please for infamous Thai chicken!!! Gut bugs are involved in all kinds of things in our bodies and we need to feed them properly. I'm sure they like Thai chicken!!!

Sunday I finally cooked that large beef roast I had in the freezer and it turned out well. Served it with mashed potatoes and gravy, roasted carrots and onions, and Yorkshire puddings. You can buy them frozen now which makes life a lot easier!!!
