My loved one is becoming less able to eat, drink, or take meds
His body is conserving energy. His brain is narrowing its focus to safety and familiarity (me). Is this considered late stage Lewy body dementia Alzheimer's/Parkinson’s?

That is a question for your husbands doctors. But it most definitely sounds like hospice care is now in order. You can call the hospice agency of your choice and they will come out and do an assessment to see if he qualifies. And hospice is available 24/7 so please call them today.

Has he never been to the doctor or neurologist for a diagnosis?

You should check with his doctor(s), and ask for a referral to hospice. I'm sorry that he is in this decline. Get some medical arrangements and assistance for him, and take of both himself and yourself.
